We spoke with Sally Gough to get down to the rind of cheesemakers.
What do you love about cheese?
That you can eat it for breakfast, lunch, dinner or snack on anytime.
Describe a typical working day for a cheese maker.
Depending on whether milk is coming in, the day can include draining, packing and loads of cleaning.
What is your favourite way to eat cheese?
With a glass of Hunter Valley wine – White, Red or sparkling.
What are your most popular cheeses?
Marinated Fetta, Labna and Buche de chevre.
What makes your cheeses stand-out?
They taste great!
