You only need a light (green) appetizer to celebrate the first day of spring. It’s a great way to start St. Patrick’s Day with something light and refreshing. This will help balance out all the heavy food you’ll eat later. This dish is delicious and festive. It’s slightly tart with thinly sliced apples, sweetened by honey, and creamy and fresh from olive oil and Parmesan.
Ingredients:
Granny Smith apple
Parmesan – 1/4 cup thinly sliced or shaved
Extra virgin olive oil of high quality
-Honey
-Fleur de Sel (or sea salt)
Microgreens (or fresh herbs)
Directions:
Apples can be cut into quarters and then thinly sliced using a mandolin. The slices are layered flat, similar to carpaccio. Top evenly with Parmesan. To taste, drizzle the olive oil with honey. Add a generous amount of microgreens and salt to the top. *Toasted walnuts would also be delicious. Serve 1 or 2 portions
